Last night was our first trip to Red Vespa. Our server wasn’t sure about how their gfree crust option was cooked but inquired with the kitchen, this is my experience: any pizza can be made with a premise gluten free crust base. There is a $5 up-charge for any gfree pizza. The base is premade and frozen. It is dressed on its own pan and cooked on that pan on a separate side of the oven from the other pizzas. However it is sharing oven space with he other pizzas. I did not see how it was dressed so do not know if fresh utensils and separate ingredients were used. I ordered the artichoke, mushroom, prosciutto pizza. Our food was done within ten minutes- very fast. The vegetables say they are wood fired and I was concerned they were cooked on the oven base without a pan so I stayed away. Every bite was serious pizza heaven. It was both soft and crisp. My guess is a rice based crust. I was full after half the pizza. I did not get sick. Repeat: I did NOT get sick.

I have said it is Celiac safe but leave that up to you.

I’ve given it three stars due to my fears about the utensils but am looking forward to trying them again.
