A reservation is a must no matter what at this gastronomic restaurant with a nightly fixed menu. When you let them know about your gluten intolerance in your reservation, they will cater the menu to your needs. In my case, the Black Forest cake at the dessert course was made with almond flour. They did not have GF bread which is perhaps the only area for improvement on the menu for us celiacs.
