You start by choosing food from the salad bar, but they asked me to tell them what I would like and the chef prepared it fresh, to ensure that there was no cross contamination. They were well informed as to which meats were OK to eat, basically all but the sausages during our visit. The meats are brought to you table and carved in front of you. Each meat has a separate knife. So no cross contamination with the sausgaes that we can't eat They also served us gluten free cheesy dough balls, which were delicious and fries, which are also safe
