Very knowledgeable! They had a separate prep area and gluten free dough. He did say that they had flour in the kitchen and they use the same screen for gluten and gluten free calzones so he thought it would not be safe for a celiac.
I asked if I could take it home to cook it as a solution and he said absolutely! He cooked my mothers regular calzone and prepped mine all up. Gave me baking instructions and all the toppings to brush and season with in take out containers. It was a wonderful experience and will definitely come back.
Please note that the only safe way for me was to cook at home. Their kitchen was spotless so I personally felt comfortable enough in regards to cross contamination. This is my own choice.
