Souk has amazing gluten free options. Everything is pretty much made it order, so you can eliminate what you don’t want. They have a gluten free pizza crust that is fantastic and you have to have the grape leaves.

I have been eating at Souk every few months since it opened in 2019. Every time I went in, the server helped me figure out which items were options and what could be modified. In the beginning and during Covid it seemed like they were going towards making a gluten free menu, or at least marking the offerings more clearly.
Just in the last few weeks I was given a basic “oh we can probably make anything gluten free for you - but your best option is X.” I can’t remember the suggestion but it wasn’t an option for me at the time.
The server wasn’t all that helpful, but I just assured them that any modifications to make the “baked shrimp” gluten free would work; and I could always pick something else if that one didn’t work.
I was very surprised when I received the bill with a $5 up-charge for sautéing the shrimp rather than baking them. I said nothing at the time because the meal actually was DELICIOUS - I was just very aggravated that the up charge occurred without letting me know (even after double checking the sautéed would be ok) and considering the up charge had never been applied to my bill in the past.
Their food is very good, but it feels like they’re offering less options that work for me, with gluten and other food sensitivities. Though I think they could easily modify their menu and be a little more understanding about allergy friendly customers.
