The bread is from a local bakery and the folks do really understand the issues around preparing food for people with celiac.

A note: the bread is frozen and so they did have to heat it up, and were reluctant to do it on the shared surface, even on foil, because they were concerned about cross contamination. Instead, they microwaved the bread for my sandwich, and it was still completely delicious, and I felt very safe eating there. I really appreciated their honesty and their flexibility.
