I found this little deli bar inside of an adorable farm market shop called Bushel and Peck. Although they did not have a gluten free menu the chef who runs the place was able to accommodate me very well. She made me a delicious shrimp salad sandwich on gluten free cheese dot waffles. She was extremely knowledge about what precautions to take and advised which items could be adapted for gluten free. I have returned many times since that first visit and never had an issue.
Update - Stoke has moved to DeLaTerre bakery which is not a gluten free bakery and the risk of cross contamination has increased dramatically. They will still carefully provide food which is gluten free but the environment is flour filled so not an option for those sensitive to cross contamination.
