I'm a symptomatic Celiac and brought my sister who is even more sensitive to gluten than me and we both had good experiences. The staff is knowledgeable about gluten free.
A wide variety of the taco proteins are gluten free just be sure to ask which ones are made in a shared frier with the churros since those proteins will not be safe for Celiacs to consume even if they are listed as gluten free. We ate the carnitas and the chicken and both were delicious and safe from cross contamination. We had the bowl with chips (gluten free separately packaged chips not made in the same frier as the churros).
I'm not as sensitive as my sister is so I took the risk of trying the proteins in shared frier and same grill as gluten containing items in the taco plate and they were delicious. I had no reaction but if you're super super sensitive I would not risk having the tacos which are grilled on the same grill as the flour tortillas. The horchata is vegan and gluten free and to die for and I would go back alone just for the horchata. My sister and I both didn't get sick and appreciated the patience the staff had with us - they were all very understanding and while it took some chatting to get answers on what was Celiac safe compared to just gluten free, we felt they were transparent and the delectable food was worth probing for.
