The waitress and hostess I talked to weren't super knowledgeable about gluten, but were willing to ask the chef about what was in their sauces and cooked on their griddles. I got the shrimp and grits at the suggestion of other commenters, and they were good but not mind-blowing.

Shrimp and grits were out of this world good. Ate here twice and didn’t have an issue but I’m a silent celiac so hard to say about CC.

They don't have a GF menu but many options if u ask. I got the shrimp & grits w/ out the french bread & were amazing!

I had their shrimp and grits I was so glad that they didn't have their head on. (I've been to a few places where they did and it was a big mess) They also had about 6 or 7 items on the menu marked as gluten free. I would be sure to let the waitress know of your allergy since there wasn't a separate menu and she wouldn't be able to alert you of any possible problems.
This was my first time there since they starting notating GF items on their menu. I had the Costa Rican breakfast but didn't know until they brought it out that gf mean not getting the black beans on it. Without them, it was a bit dry.
