Their staff understood the importance of having no cross contamination. Say that you can’t have gluten it is serious like an allergy, im not sure if they know what celiac is I didn’t lead with that. They have a gluten free menu and will prepare the sushi on a clean mat, change their gloves, use a clean plate and utensils etc if you tell them its serious. Obviously they give no guarantee since its not a dedicated facility. I was fine after eating there. They also have gluten free soy sauce!
