Sushi Kubota

Up front: I have a wheat allergy. It is extremely severe, measuring over 100 kU IgE, so I know immediately if I am gluten’d and could die during the meal. Thus I am careful to only ingest small amounts as a tester. I say this because, like any sushi place of this type, Kubota brushes nikiri on top. My body agrees with the research that soy sauce is safe because the protein causing the allergy is essentially nonexistent. I’m not sure if this applies to celiac’s, so take this review with some salt.

With that disclaimer, Kubota altered the menu around my extensive allergies, including one to crustacean shellfish. He has made the only tamago I can have— he omitted the wheat. I was thrilled to finally try it.

I had no incident here, and he was careful to confirm my allergies beforehand despite not speaking English (I had the hotel concierge detail my allergies a couple days before while making the reservation). For other wheat allergy havers, I can wholeheartedly recommend this place. The sushi was excellent and I left extremely impressed at how he worked with my restrictions.
