The very first thing they asked when we sat down was if we had any food allergies. They were very knowledgeable on gluten (menu notes broth and noodles) and had all their bottled success labeled with allergens (including gluten). They had gf soy sauce and ponzu as well.
It was an excellent experience and no issues for my symptomatic celiac son.
