At all of the Tacoria locations I’ve been to, they’ve been instructed to notify the manager when you order and say you have a gluten allergy. The manager is always knowledgeable about cross contamination and preparing the dish safely. Everything can be made gluten free except the tortilla chips which are corn tortillas made in a shared fryer. Unfortunately, they inconsistently have the option to mark celiac/gluten allergy online, so I usually call before and after my order to make sure they mark it correctly as a gluten allergy.
