Only one option of meat is GF and no chile sauces are GF, but my son and I were able to get a safe dinner. I got the frito pie with the peppers instead of chili sauce and son got a steak bowl. No offer to pull stuff from the back but they did check on the GF status of various items.

Prices at the airport were twice as high as listed on the linked website. I ordered green chili cheese tamales, listed as gluten free without sauce. The server didn’t listen well, so she unwrapped them from their cornhusks and dumped them on the plate. At the cash register, someone wisked it away to replace them with wrapped ones. I discovered AFTER taking a bite that they were now the NOT gluten-free pork tamales. A waste of 5 bucks and now I get to worry about being sick on the airplane. No time to go back & complain in person.

ALL the meats have flour. Unless you eat vegan you can't really avoid the gluten. I was appreciative of their knowledge to basically tell me to eat elsewhere!
As of 2014.08 - they have a printed gf list if you ask for it with good options.

The staff is very knowledgeable about what contains gluten. They use flour in many of their sauces but know which ones are safe. Ask for a manager and they will help you navigate the menu. Good option if you are flying southwest in Denver. They also have eggs and beans for breakfast if you have an early flight.
