The paella should have been gf, but I ended up getting sick. Could have been from a different meal I had. I will go back to try again. The food is meh, and there aren't many celiac safe options. I would second the staff being rude. We were basically kicked out, even though I was still drinking my second drink.

Use extreme caution here if you have celiac disease. There are several menu options that are gluten free. I ordered one GF salad and it came with bread on the salad. We informed the server it needed to be GF, it was brought back, same salad just no bread.

Staff is extremely rude and will argue with you.

The menu lists deep fried items as gluten free but it doesn't say that they are deep fried. When I voiced my concerns for the gluten free patrons the manager was confrontational and aggressive and stated it isn't his problem if options are inaccurately represented and anyone with an allergy should be communicating to the servers. The server was rude and unaware of what gluten was. I will not be going back.
I have celiac. I went there recently and they changed their menu. The waiter was very rude when I voiced my concerns about items that were marked gluten free on the menu but contained items with gluten in it. And he really didn't seem to have any knowledge of what gluten was. To be safe I only ate the soup. Very disappointing because I've been there in the past and it was great.

Great variety and knowledgeable staff.

Our waitress was very knowledgable about GF (she was diagnosed a year ago). The food is delicious and there are lots of options with a ton of flavor. Don't miss this place if you're in Bethlehem!
