I came in testing my chances. I was able to safely have chips (dedicated chip fryer), salsa, and cheese dip. They make their own tortillas and are completely gluten free. I took my chances and had tacos de lengua. (beef tongue)I assumed it didn't have "seasonings" that would have gluten.
Tacos were good! The waiter said he could not guaranteed what had gluten but I speculate that other items done have gluten. They just weren't knowledgeable about gluten.
BUT posting here because you can have chips and cheese in a crunch!
I'm very sensitive and will update if I end up not well.
