Server was polite, knowledgable about their menu, and guided my order based on what contained gluten. I felt confident based on their response to my saying I had gluten allergy.

I went with sashimi set and subbed steamed rice for sushi rice, as latter was not GF according to server. They held the dressing on the salad and I gave the miso soup to my wife since they said was not GF.
