We went for the Winterlicious festival prix fixe which was $55 per person. The regular prix fixe deals (as of February 2024) are $85 per person or $110 per person. A la carte ordering is possible too, of course.

Carbon Bar has an upscale atmosphere and the menu is centred around Texas-style barbecue, though there are other options.

I had salmon tartare for an appetizer, a BBQ platter for the main, and sherbet (strawberry and mango) for desert. It was all amazing. The meat in my main initially looked like it might be a small portion (three pork ribs, two slices of brisket, and one end piece of brisket) but it was very rich and very filling. The main came with cole slaw as well.

The menu had gluten free items clearly marked, as well as some other items that could be made gluten free (e.g. caser salad without croutons). The server made a note when I said I needed gluten free for medical reasons. I was happy with the way they handled things.

The menu also noted things that were dairy free, vegetarian, or vegan. It looks to me like it would be possible to get a meal that's GF/DF or GF/vegetarian also. (Maybe vegan too -- I didn't look at that). The menu on the web site includes these indicators too.

The food was amazing and I felt great afterwards.
