We were staying at the Westin and found it incredibly difficult to find celiac-safe food that could be delivered to the hotel. Based on the reviews of this restaurant (which is in the lobby of the hotel), I tried to order room service, but they couldn't answer my questions about safe preparation. I ended up going down to the restaurant to talk to them. Unfortunately, the hostess & serving staff really didn't understand anything about cross contamination. They were very friendly, though, and ultimately called a supervisor who brought out the chef so I could talk to him (I think his name was Austin). After talking with the chef I felt confident about ordering. The food was great. Gluten free items are marked on the menu. We had the bacon wrapped figs, the kale & mushroom ravioli and a cobb salad with salmon. We were also going to order the wings, but they go in a shared fryer. I felt fine afterwards, so definitely feel that the food was safe. They did mention that room service food is actually prepared in a different area, so I'm not sure whether the room service food would be safe at this hotel. Overall I was so happy to have this option, even if it took a little bit of time to order.

If you're staying at the Westin Las Vegas, don't pass up the dining experience. A pleasant surprise with GF options listed on the menu. The raviolis are really good. Plus for breakfast, they have GF options plus toast to add to a delicious avocado and poached egg toast option, depending on how sensitive you might be.
