Staff is excellent, ask to talk to the chef before ordering. They do have gluten free bread, and do have some gluten free options (variety is not amazing, but they are making an effort). The chef is great, bring a Spanish dining card (very helpful). One thing to note is that the Yucca and Sweet Corn Patties are listed as GF but do have Gluten (similarly, the Coffee Flan dessert can be made GF). The chef caught this before serving it, and I was able to order something else (they are paying attention). Breakfast does have some options (eggs are good, and the baked potatoes are amazing)! Generally safe as long as you are vigilant and willing to work with the staff.
