We stayed at the Banff Springs Fairmont for 5 days and had breakfast in the vermillion room 4 times (breakfast came with our package!) and dinner once. All of the staff members we encountered were knowledgeable and helpful. As of April 25, 2024 they had a dedicated GF frier. They did not mark my GF meal separate from my husband’s non-GF but every time my food was delivered it was specified that it was the GF celiac safe dish.
Breakfast - for the first 3 days I ordered off the a la carte menu (had the vermillion breakfast twice and the french omelette once). I had been eyeing the buffet because there were so many options but wasn’t sure it was safe for me (as a sensitive, symptomatic celiac). On the last day I mentioned that to the server and she let me know I was welcome to get the buffet, and they would prepare everything in the back and bring it out. So I went up to the buffet, picked out what I wanted and gave that list to my server. Not on the menu, but they can do GF toast, pancakes, made to order omlettes, etc.
Dinner - we ate dinner here on a busy evening. There was a bit of an issue with timing but overall it was a great experience. The crème brûlée is to die for, and many dishes are GF or can be made GF with modifications.

Had breakfast here- ordered from the Al a carte menu I had the power bowl and it was delicious. My server was knowledgeable about ‘allergies’ and the menu clearly showed which items were or could be made gluten free. They also have gluten free muffins in the buffet however they were next to the gluten croissants. I asked a server if I could have some muffins from the back to avoid cross contamination and they were happy to accommodate ! Would recommend eating here !

I ate here twice. Once for dinner and once for breakfast.
Dinner review: The staff is highly trained in allergies. If prior allergies were not noted in the reservation, the hostess asked every group upon check-in if they had allergies.
The waiter told me which foods had cross contamination before I could even ask about it. When the food arrived he reiterated to me that the French fries everyone else was eating were cross contaminated.
The food was delicious. I had beef short ribs. Everyone else also enjoyed their food. I would definitely eat here again.
If you like views, ask for a table near a window.
Breakfast review: The staff continued to be just as courteous and knowledgeable as dinner.

Excellent restaurant within the Fairmont Banff Springs hotel. Most of the things on the menu could be made gluten-free and waitress made sure the kitchen knew about the gluten. An expensive restaurant, but still it’s a lovely place and nice to walk in and around the building.

This is one of the restaurants inside the Fairmont Banff Springs. The service, food, and atmosphere were all excellent, and the server told me that literally every item on the menu (except for a stew that has to cook for six hours) can be made gluten-free. The homemade bread was also really good. (The only downside is that it’s quite pricey, but I found it to be worth the splurge.) Highly recommend!
