You can order chicken and sauce separately, the chicken is very yummy and tendering with a little bit salty taste. We bought a gluten free soy sauce with us all time.

Tian Tian Hainanese Chicken was closed so I decided to give Maxwell (stall 01-40) a try. I ordered a “chicken rice, medium, no sauce” and the man in the booth nodded and gave me exactly what I ordered. It was delicious and I didn’t get sick. In hindsight I’d change one thing if I were to do it all over again and that’d be “chicken rice, LARGE, no sauce.”

The sauce for the famous chicken rice does have soy/gluten BUT you can ask for the chicken rice with NO SAUCE. Make sure you ask at the front counter and again when they're handing you your food. The orange chili pepper sauce they serve is gluten free. It's hard to find hawkers who make gluten free chicken rice because of the soy sauce, so was really happy to have this!
