Knowledgeable as to which dishes can be safely prepared gluten free. Always prepared to adapt dishes to accommodate. Edited to add: Menu is now labelled with what is gluten free and most of desserts were naturally gluten free, including the dessert of the day - the only downside was that there was too much to choose from!!
