Tobalá is a beautiful exploration of Oaxacan cuisine. Everything on their menu (outside of one pastry for dessert) was gluten free. The cocktail/wine/mezcal program is deep and thoughtful, yet fully approachable. Menu highlights for us were the duck mole enamoladas and the aguachile. Nothing on the menu was marked gluten free but as is the case with many Oaxacan restaurants, the cuisine is based around corn; flour/gluten don’t really come into play.
