Gluten free ramen!!! I am so happy. I was dialed in on the pork shoyu ramen so I can’t speak much about the rest of their menu but they did have other dishes marked gluten free. They use tamari and have gluten free noodles that can be cooked in a fresh pot of water. The bamboo shoots are a topping that can just be omitted as they are soaked in soy sauce. The broth, noodles, and especially the pork were insanely good. They seemed knowledgeable about their menu and precautions they needed to take both when I called in advance and when I was ordering.
