The main gluten-free options you can get are their Pinsas. Most of them can be made gluten-free on request and with an additional charge of 2,50€. When I ordered my Pinsa, the cook washed his hands immediately, got the dough which was packaged in a sealed plastic wrapped and prepared and baked it in an aluminium tray to avoid contact with other pinsas. For serving, a sheet of baking paper was added on the wooden board, that is used for all pinsas, sometimes they put it on a plate instead.
