Very helpful and aware regarding allergies (peanuts and soy). Told us that cook would be informed and the food would be prepared with clean gloves, cutting boards and utensils. We ordered Pho, so that was fine for wheat intolerance and also safely ate.

All the pho is gluten free but not the fried onion topping. They were well educated

Wow! This place is great! The owner responded to my email asking what was GF right away and stated that all their pho was GF naturally, as were the summer rolls without the peanut sauce. They said the proteins used for the noodles, rice, or salad bowls was marinated with gluten, so avoid those.
The pho was EXCELLENT. Very fresh, easy to order, and delicious!
Update: I've heard from others that the chicken pho needs to be requested to leave out the fried onions to be GF. I'm vegetarian so it's never affected me, but be aware!

Not sure about this place. Another reviewer said what should be accurate, pho should be gluten free. Used to be fine eating here. Then, the past two times we ordered I got sick. The first time it happened I thought maybe it was a coincidence and something else was going on, but it happened again.
The pho is just okay compared to other places you can get it here, but the really cool thing about it is the way they package the takeout.
Also, not sure why they must marinate meats with anything with gluten. Jeez guys, just use tamari! Same with peanut sauce, use gluten free ingredients. They are readily available.
