Symptomatic Celiac

I was interested to know if Walk-On’s would have gluten free options (being a Louisianan restaurant). It was the waiter’s first night working. He told me he wasn’t sure but would ask. The next thing I know, the manager is sitting next to be explained how they do not have a gluten free menu but the chef is aware of what ingredients contain gluten. He then pointed to specific options on the menu that would be safe for me to have (being celiac). Once my food arrived, the manager came back over to ensure that it came out properly. I appreciated the attentiveness of this establishment.
