Called before business hours and spoke with Gus. He informed me that HE Puts his customers first and their staff members are knowledgeable about celiac and will make sure that they change gloves and utensils and do all they can do to keep you safe so that you can enjoy your meal. I did not ask if they had a GF menu but Gus have lots of suggestions on plates that they could make GF. He said they have dedicated fryer for the French fries and when I confirmed that he assured me (5 total in house fryers) and one is designated to fries only so NOTHING gluten ever goes in that fryer.
He said that they can make most meals safe by grilling the meats or eliminating the buns or taco shells.
