I've been to Watami a few times in the last year. The servers have always been kind, welcoming, and communicative with the kitchen staff on behalf of my needs. The first two times I ordered from the sushi bar only and had no issues; most items are already GF or have adaptations that still taste amazing. The sushi is fresh, creative, and delicious. GF soy sauce and wasabi are both covered too. The third time I got sick the from a "GF version" of a cooked rice and fish dish. Most kitchen items use sauces with gluten so I would stay away. More recently I called in to inquire further. They assured me that they routinely serve gluten sensitive folks with success. However, I found out that they share cutting boards with gluten containing items at the sushi bar. So sadly, it's no for me now. All in all I think the final word lies in how sensitive you are.
