They change their gloves and put down wax paper on the sandwich making station for items made with gluten free wraps. They also use a specified gluten free metal plate to toast the wraps in the toaster. There is still a potential for cross contamination if crumbs fall on the wax paper from gluten containing items. It is important to note that the grill surface is not gluten free, as buns, gravy, stuffing, and teriyaki sauce are occasionally cooked on the grill.
