Staff was very friendly & accommodating regarding question on gluten contents. The noodles for the pho and vermicelli are GF as is the broth. They advised anything grilled or obviously containing wheat (egg rolls or gyoza) should be avoided but said they could substitute the rice noodles easily for egg/wheat noodles or not use soy sauce if letting the waiter/cook know. Not a dedicated GF facility so cross contamination is a risk. Their hoisin sauce has wheat & barley malt so bring your own if a must in your pho like mine :).
