They do the paninis using a gluten free wrap (I think it’s PC). They taste very good and are made separately, but they are smaller than the regular panini. Be prepared that at times they do not have the gluten free option available.
Food was excellent but shockingly overpriced for the size of the gluten free panini. We really loved the food but would not return for the miniature paninis at an exorbitant cost.
You can order any of the Paninis and the owner goes in the back and makes it seperately . Very knowledgeable. I am not too sensitive with cross contamination , but I am celiac and did not have a reaction .
They do use the same panini press then the other sandwiches but he did put a protective shield .
