Asymptomatic Celiac

I am ceoliac but can anyone advise about using fryers , can ceoliac use fryers that are used with other foods or does the temperature kill any cross contamination I get mixed response on this.

    CDtoned I would not advise eating foods fried in a fryer that has cooked gluten. It will contaminate. I would make sure that the place has a dedicated fryer for non gluten items

    christine54386 I’ve heard people say this as well. It is not true. Gluten is a protein, not a bacteria. It will not get killed w high temperatures 2 replies

    ryanshipman I always ask if restaurants have a separate fryer. I get the rash (DH) And so I have to be extremely careful. However I still get brain fog, bloat, sick, etc after having cross contaminated foods

    jayne176648 For Celiacs it’s true. Every contamination causes a reaction even if you don’t get stomach aches. Or feel the consequences right away. The T cells are taught to react.

    gfhank970 no way. after I stop eating gluten many years ago. a ate some of my kids take out French fries (e.g. 5). So miserable never again.

    susan450 I agree with the other comments! My doctors say the same, as well. Friers have to be 100% gluten free to keep you from reacting. Temperature has no bearing on it. If you have dairy allergies also, and most gluten sensitive and celiac’s do, then even if it is a dedicated gf fryer, you need to ask if any dairy foods are cooked in the fryer, in order to be safe.

    lboldt05 Yes for Celiacs you can not have foods from fryers that are used for gluttonous foods. You will likely experience mild symptoms if you have cross-contaminated foods. The temperature does not kill it because it is not a bacteria, etc. It is a protein and therefore will not be affected by high temperatures.

    Heather565 Fryers that are not dedicated will have pieces that break off from other fried food (example chicken tenders) that can end up mixed in your plate of fries. Also when we filtered our grease there was always tiny things floating in it. I worked in food service for years and would not recommend it.

    guylam817 The cross contamination of breaded foods and French fries are generally cooked in the same fryer. Always ask the question. My husband had a very violent reaction. Make certain the “runners” are aware.

    powercharge I have been told the very same thing and have been glutened trying the shared fryer. I had a realization in the middle of the night that if frying food killed the gluten we should all be able to eat regular fried chicken etc….which as we know is DEFINITELY not the case. Grrrr, makes me cranky. 1 reply

    celiacboy and to get the temperature to kill of the gluten simply ask the restaurant owner to raise the air conditioning to 600C. This is the temperature that gluten starts to break down officially making it gluten free.

    marion53801 Jo, you have a little bit of a learning curve to live through. As many of the folks here have said, cross contamination is a big concern. Like you, in the beginning I thought SURELY hot oil would destroy the poison we call gluten, but sadly it doesn't. If you are eating out do NOT eat food from a fryer that is used for breaded food. If you are deep frying at home, you are OK as long as you keep your oil from contamination. My husband doesn't suffer from Celiac but I finally put my foot down and won't let gluten in my kitchen because of the cross contamination issue. As a little side note here, I have an air fryer that I use for skin on chicken and it ROCKS! Also, hand sanitizer doesn't seem to destroy our particular poison: soap and water does. I have to deal with some unkindness from my actual family about my condition which is hard coming from people who are supposed to support me.
