A very good cake mix. One box (18 oz) made 18 cupcakes in the large size tin. Actually done at 27 minutes as indicated on the box! Tops were not brown but felt done and toothpick was clean- and no underdone center. I used 1/4th cup plus 2T canola oil instead of butter. I’ve also started letting the batter sit for 10 minutes after mixing to avoid the graininess that seems common in GF cake mixes.
