This flour is MAGIC. Yes, it has wheat starch in it so it’s not suitable if you’re allergic to wheat, but they’ve managed to remove the gluten to the point that it’s been certified by the Italian gluten-free ministry. If you’re making pizza or bread or anything that requires 00 flour or similar, this stuff is incredible! Tastes and acts like the “real thing.”
