There were measures at Fairfield University to prevent cross contamination. They provided a separate safe kitchen within the cafeteria solely to prepare gluten free and allergy free meals. Food in the dining halls were labeled gluten free and I was even able to speak with chefs and the dietician for a personal plan. Yes, there are many options within the main cafeteria and other spots around campus such as the Stag Diner. The chefs and staff were extremely knowledgeable and accommodating! There is a separate locked room for gluten free students with that stores basic essentials. For example, toasters, waffle makers, access to packaged food, cereal, etc. Overall, I would say the Fairfield University is very accommodating and I feel very safe eating there.
