Great pizza! Delicious combinations of local farm ingredients, including house made sausage. They follow very specific precautions and steps to ensure that gf pizza is safe for celiacs. This includes servers changing gloves, preparing toppings in a separate space in the kitchen and wrapping the pizza with foil before baking in the large wood fired oven.

I ordered a Medecine Wherl pizza with a gluten free crust. This is the FIRST gluten free pizza that I have ever had that was delicious! I had almost given up on finding an edible GF pizza crust. American Flatbrwad gets their GF crusts from Hillside Farm in Vermont. We also had a salad special- yummy and large! Our server, Tom, was knowledgeable, attentive and prompt! We also enjoyed the musicians that played in rhe Speakeasy section if the restaurant . All in all, an enjoyable evening .
Went here for lunch. It wasn't busy, so we had no issues. They asked when I ordered if it was a preference or Celiac, so they are knowledgeable. We sat at the bar and the bartender, Cal, was great. Pizza was REALLY good and I did not get sick. I'm a super sensitive Celiac. We would go back. Non gf hubby said his Margherita pizza was one of the best he has had!
They were very knowledgeable about gluten free protocols and what was available. Gluten free Pizzas are cooked in the same wood fired oven, however they change gloves and take other protocols but getting fresh cheese and sauce. My sensitive celiac did not have any reactions. Both of my kids said it was some of the best gluten free pizza they have had.
I thought they were very careful with my order. They explained the risk of cross contamination and what they would do to mitigate it, ie cooking my order in a foil package. I could see the preparation and cooking area and felt completely safe. One of the best gluten free pizza bases I’ve ever had.
I’ve eaten at flatbread many times. I really have to be extra careful to tell them to cook my flatbread on a separate pan. It can still go in the woodfired oven. It just has to be on a separate pan. And then I need to remind them to use a separate pizza cutter… If I just say gluten-free and don’t specify these things, it’s not good. The last time I ate there I ordered takeout in a hurry and I forgot to say to take special caution and I got severely glutened.
