We were able to meet the owner. He was reassuring on GF and even commented that past cross contamination risks from making Pita/etc were not there since Covid has forced them to change their processes internally. I had the lamb kabobs with rice and veggies with no issue

Amoura is the employee café at SF international Airport. While their fryer is shared, they do a great job of keeping things on the grill separate. Try their chicken Caesar salad or Mediterranean plate without pita bread YUM!
Most of the menu, other than the pitas, are naturally gluten free. I had the chicken with no issue. The waitstaff was knowledgeable and was willing to check with the chef to try and change a recipe if need be
