I am a former employee of this restaurant. As someone who worked in the kitchen and still knows everyone who works there, I can say that there is a reasonable level of care taken when someone orders with an allergy in general. The servers are not typically very knowledgeable about allergies, however the kitchen staff is knowledgeable, so as long as you tell the server to ask the kitchen, they can inform you.
The grill is cleaned anytime someone with a gluten free allergy comes in, gloves are changed, surfaces wiped, etc. The kitchen is a not dedicated gluten-free, however, there is no gluten in the kitchen aside from the breading for the proteins. Beyond that, the breading is *typically* contained to only a couple areas of the kitchen that don't see a lot of action, so there's a relatively low chance of cross-contamination.
My girlfriend is celiac, and we still eat here even though I know the kitchen procedures, which shows that it truly is pretty safe.
