I called the restaurant to ask about gluten free options and was told this:
There is no dedicated gluten free prep area.
The fajita meat, ground beef, chips, cheese dip, and rice are not gluten free.
The safest items were roasted chicken enchiladas, as they were on corn tortillas, and several sauces were gluten free.
My family ordered from here, so they all had tacos, sides, and chips, but I could only eat the chicka boom enchiladas. I will say, the food I had was very good! But, in the end, who wants to go to a Mexican restaurant where all you can eat is $12 enchiladas and nothing else? I will go back if I am eating with other people, but these limitations make it it not worthwhile as a go-to restaurant.
