The gluten-free pizza is made from buckwheat. It is deep-dish style and has a fluffy texture. In my experience, this crust needs to be cooked extra long in order to have a better bite. Unfortunately, it usually comes out more like cake. Requesting well-done to some of the wait staff has more inconsistent results than the safe handling request (which, if I had to pick one, I should count myself lucky). I have had cross-contamination with wheat on one occasion, but numerous safe visits to offset this statistic. Nevertheless, if you have severe wheat issues, proceed with caution. The iced tea is usually the weakest in town, and management listened to this complaint. Afterwards, the tea actually tastes like tea, but it's still pretty weak. They are getting their beverage profit, for certain. Management does listen and even keeps up good communication via email feedback. They made good on my glutening incident by offering a free lunch. I wish that they could find a way to hold on to good waitstaff.
