If you have an early morning flight out of Vancouver International Airport, I highly recommend an overnight stay at the Fairmont at the airport. We got really fun views of the jetway from our room and enjoyed a delicious meal at both the lounge and restaurant. Fairmont hotels do an amazing job training their kitchen staffs to understand Celiac, gluten, and the importance of avoiding cross-contamination. They not only provide safe, delicious meals for those with Celiac, but they also do it in a way that doesn't require a lot of work on your part to find out what is truly safe and what is not. My son who has Celiac (and is very sensitive to cross-contamination) enjoyed a burger for one meal and a steak for a second. Dedicated fryer for delicious french fries as well. I just am really impressed with the Fairmont chain.
