Breakfast: the Breakfast buffet downstairs was great. We felt safe even though it's a buffet situation because all of the food is in separate containers with its own serving utensils, and all of the bread/toasters are on their own station on the opposite wall of the buffet area. They will also make gluten free pancakes upon request, just place the order with your server, they will cook them in the back and bring to your table. The server was very knowledgeable. We were very impressed.
Poolside cafe: they have a dedicated fryer and can produce an allergy information binder upon request. Apparently they serve GF fried chicken fingers and have Udi's GF buns, but unfortunately on the day we went there they were out of those, so our celiac kiddo just had fries and a burger patty. The gluten-containing food wasn't great either. On one day the staff was very knowledgeable about GF, and the next day they had no idea what I was talking about. I wouldn't recommend the poolside cafe for a meal, but a snack of fries might be fine.
