Once it comes into contact with a surface it lives there forever, cook Ware, dinnerware, silverware, cooking utensils, if they touched gluten there is cross contamination, my husband was glutened here. Dedicated fryer means nothing when the other food is being cooked on glutened surfaces, I watched them stick a gf bun next to a reg bun on the grill.
