Had a bread-less chicken burger with fries and wine. They have allergy menus on each table and as long as you go bread-less there are lots of options. They said the fryer is only for the fries. I did not get sick. But still ask all the questions as it was confusing at first.

They can’t guarantee that ANY of their meals are gluten free. Employees told me that their fries (at any HansimGlück) can be contaminated. Not recommended 🥴

Very great food. They have an allergy menu, a variety of gluten free options and the staff is knowledgeable. The fries are in a seperate fryer but the staff is always saying they can't exclude cross contamination. However I never had symptoms after eating the fries. Their sweet potato fries are amazing and the breadless burgers taste so good, you don't even miss the bun. I can also recommend the caeser salad. It's my go to restaurant when I'm in Nürnberg. :)
