A counter-order restaurant with a long line and big crowds, it's not the easiest place to make sure you're getting careful service. I think this might not be an ideal place for the more sensitive diners.

For us, we ordered the grilled chicken- and didn't realize we needed to ask for it not to be served on a piece of bread. We were able to remove and be fine, but more sensitive people would probably need to ask them to make a new order. It's a crazy busy place- the line just to order was 45 minutes, and then about 15 minutes to wait on the food- so that would not be a fun experience. We were also able to eat the fries, not from a dedicated fryer, with no issues, but if cross-contamination is a big concern, you would want to avoid them. The greens and beans and grits did not cause us any issues, but, again, those who have to be more careful would probably have to do a deeper dive. I did not feel like the ordering process was conducive for asking careful questions, and I doubt the staff is changing gloves or anything of that nature.

At the end of the day, there really weren't a ton of options and was a risky meal for us, even as low-sensitive as we both currently are. Not sure it's worth the risk, especially watching others in your party rave over their gluten-filled delicious meals. I understand the waffles are ridiculously delicious, not that I'll ever know. We all know that's just a part of life, but there are certain experience that makes it harder, and this restaurant kind of leaned that way for me.

If you just need a gluten-friendly meal, you could make this work. But if you are truly gluten free, I would take a few more precautions than we did, and you might find a pretty sparse menu. What I ate was delicious, but definitely I wouldn't say it was worth the wait like our non-Celiacs people thought.
