Love In n Out! The only gluten is the buns, they have an allergy button on the register just tell them you have a gluten allergy. To order a burger without a bun, get it protein style.

Let them know you have a gluten allergy and they have a special button on the cash register, alerting the kitchen staff to use their dedicated handling procedures. If you are not familiar with their menu options, ask for help ordering and even when they are busy, they will assist you. To get a lettuce wrap instead of a bun, order your burger protein style. They only cook fries in their fryer (no breaded products) so there is no cross contamination issue. They will give you spread in takeout packets so there is no issue with contaminated utensils or dispensers. I frequent this location and others since safe “fast food” is hard to find when traveling.

Order "protein style" to get it wrapped in lettuce
Tell them you have a gluten allergy and they will walk your order through to make sure of no x-contamination. I get the burger, protein style, with ketchup and mustard only. Never had any problem.

✴ Prior to ordering, let them know you have a gluten free order. I usually tell them
“gluten allergy” and they put an allergy alert on the order as well as a verbal notification to the back. If you don’t mention “allergy” you’re subject to cross contamination.
They will cook the patty on a new and/or cleaned surface to avoid cross contamination. When any gluten free or other allergy order is made, they will note it on your order and also verbally tell the kitchen.

I’m so happy that I’ve been able to safely eat at 2 In & Outs since being diagnosed. They clearly noted gluten allergy on the receipt and my food-was on a separate tray. I’ve gotten the same thing for years- hamburger, protein style, mustard grilled, grilled onions, no spread, extra veggies - and a fries. I tried doing a double double before and it’s too messy- if I’m that hungry I order 2! I wasn’t sure about the ketchup so I just asked for mustard packets for my fries.

spoke with manager who assured me they follow precautions, including glove change, separate prep, different spatulas etc but still got glutened.

Found In-and-out during our trip through California and Nevada. As their protein-style burgers and fries are a no-brainer for gf meals, we went there more than once.
