Jaws was my favorite pre-celiac diagnosis, and I decided to try it after reading reviews on here. I was blown away that they could modify almost anything on the menu. I also have a shellfish allergy so my options were slightly limited, but they were so kind, knowledgeable, and accommodating!

If you have food allergies, this is a safe place to go. I have Celiac, as well as a rare and severe food intolerance to all fruit, which can include vinegars, sweeteners, citric acid, natural flavorings, etc. This was only my fourth time eating out in almost 4 years. I was understandably nervous, but decided to give it a try based off these reviews and I just want to say, the staff was exceptional. I called ahead and was able to ask the chef and the servers about their ingredients and protocols for cross contamination, which they explained very thoroughly (they have a separate space in the kitchen, gluten free soy sauce and eel sauce, will change their gloves, etc). They also asked to write down my more specific questions about my order, and found the answers and were prepared for when I arrived. When we got there, the restaurant was crowded but Kaylee (I hope I spelled your name right, sorry!) and Harrison were on top of it!! They were both so knowledgeable about the foods and ingredients, and always double-checked everything. They answered all of my questions and concerns, made sure that there was no cross-contamination of any kind, and put my mind at ease. It was the best experience I've had so far at a restaurant since my diagnosis! They were so willing to work with me, and did not make me feel like a burden. I know it is not easy to accomodate someone in my situation but they did it with kindness, patience and ease. I did not get sick after, so I know that my food was truly gluten free and fruit free. I ordered the Philly Roll (with fruit-free adaptations) and Nigiri, and it was so delicious and fresh. 100/10 recommend!! That night was a very special occasion, so I am so, so grateful that I got to spend it with delicious food and dear friends. I will definitely be going back, especially now that I know what I can order safely. Thank you!!

My favorite sushi place in FOCO! Many rolls can be made gluten free and they take the proper precautions. I have eaten here many times and have never gotten sick. The ATF roll is a must!

Jaws is by far the best sushi in Fort Collins. They do a separate gluten free prep on request and most menu items can be made gluten free. It also has a fun atmosphere and extensive bar selection.

Very knowledgeable and great sushi! They clean the sushi area before making it if you clarify its Celiac/allergy.
Fun and delicious! Staff was very attentive and knowledgeable. They brought out the gf sushi on a separate serving dish.

These guys really know what's up. High quality ingredients and employees who are well trained on how to modify for GF. The roll with Shitake mushrooms is awesome!

They do great work and take great care in the making of their delicious sushi. Sit at the bar and chat with Jeff or Adam anytime and you’ll learn so much about their processes. Totally celiac safe.

The staff was AMAZING with me having celiac. They can sub almost anything in their menu to make it gluten free, except eel which comes already marinated in soy sauce. They are seriously fantastic and didn’t mind making our entire table’s orders gluten free so we could all share. They also knew to sanitize everything and change gloves. I’m so thankful to have a safe place to eat sushi in Ft Collins!!

They say they can make any roll GF by omitting gluten containing items. They have gf soy sauce and will wipe down the prep area for gf orders

By far my favorite sushi restaurant, if not my favorite restaurant in Fort Collins. The food is amazing! And the best part is, is that I don't have to worry about if I'll get sick. I have celiac disease and the servers/chefs are super knowledgable about GF. I recommend trying the ATF roll and the Neff Roll.

Had a wonderful dinner here with the family- they kept all the gluten free items on a separate platter. Waitress was familiar with gf and I felt confident in her abilities. I am gf sensitive so cannot say for sure if our order was perfectly gf- as I do not feel sick after eating gluten. I do think Care was taken with our order.
Can make nearly anything GF on the menu. Sushi is very good. I did get sick after asking them to make a certain roll GF. I do think it was an honest mistake, but just double check them once they bring it to you.
