Super-friendly, very accommodating & knowledgable, and the food's GREAT!
We were in NOLA for a business conference and took my wife (the celiac) to Johnny Sanchez. Nothing on the menu is marked GF, but our waitress said most of it is already GF and nearly everything else (fried stuff) can be modified to be GF.
They brought chips and we asked if they had been made in a dedicated fryer. Waitress went to ask chef. Came back with a "no" answer and came with warm corn tortillas as an alternative!
